There are a couple of variations of Posole/Pozole. The only consistent ingredients are "posole" which is a corn product. Most people use Hominy which is in essence the same as Posole. THe other consistent ingredients are Cumin, Oregano (preferably Mexican Oregano) and Chiles. Posole Rojo naturally uses Red Chiles such as Chile Poblano. Some Posole use Chicken or beef or pork but you could also easily have a vegetarian Posole. Many "extras" are added to the Posole individually (each person eating it choses to add or not add). These include shredded Cabbage, Sliced or diced Chiles, Radishes, Shredded Cheese, Tostados (fried Corn tortillas), etc... I am starting to add Black beans to mine.

What is "Pozoli"? What ingredients did you use for cooking this dish? In addition to the red cabbage. :-)
Grace It is usually Spicy but you can Spice it up or down by your choice of Chiles - choose spicier Chiles or milder.

Wow! Posole looks really substantial....What else does it include except red cabbage? Meat?
