They are very traditional dishes in Syria and Lebanon. They are made of eggplants basically. With yogurt (on the right) and with green paper, tomatoes, lemon juice, and nuts for embellishment (on the left)

Thank you so much for the detailed recipes. I love eggplants, garlic and tomato. It seems they are not very difficult to cook. I'm not good at cooking actually, but still like to try it. :D

Recipe: grilled egg plants - mashed Garlic - salt ------> for both above dishes Then: For the #1 dish on the left: add lemon juice - cut tomato - cut green pepper - cut parsley - and olive oil - nuts - pomegranate paste for embellishment.
#2 dish on the right: add yogurt - tehina - and olive oil - tehina, for embellishment, too.
@Junko, Dear Junko, thanks for your like and comment ... yea, we eat it with bread with meals as a second meal in dinner or supper. The reddish color is pomegranate paste and the white one is tehina (It's is a paste made from ground, hulled sesame seeds). We use tahina inside and on the top, too.
