I have no true idea, but I think it can be like this:
When I say that "I am thinking about you" then it means, that I'm still conscious and undressing you in my mind.
But when I'm saying that "I think of you" Then I'm already unconscious, because my whole mind is occupied by you, and I don't have any control over it.
