- Faculty of Humanity

The first one is correct while there is having undergraduates, masters degree, postgraduates. but the second one is more correct while faculty of human there is limited for colleges only. No need to translate into plural .

It's the first one. Humanity is the human race (all the people in the world), while humanities in an educational context means the study of human culture.
