Because the old woman did not tell them about that she had the diamond, and then she did not tell them that her fiancé had grabbed it from the safety box. Then she told them nothing of value about the diamond. Then why did they give up?
I've got your point! There was a hunter searching for a necklace right. They do not find the diamond but a sketch of a nude woman wearing the diamond. A 100 year old Rose (the leading lady) learns of the drawings and contact the man informing him that she is the woman in the drawing. She and her granddaughter Elizabeth "Lizzy" visit the man and his team on his salvage ship. Etc..etc...
Having completed her story, the elderly Rose goes alone to the stern of man's ship. There, she pulls out the Heart of the Ocean, revealing that she had it all along, and drops it into the water. I think the man and his team didn't search any longer with the diamond for the reason that, there was so much history and loaded of stories with that diamond. Maybe they even realized that all the people who died in that ship suffered and their heart went out to Rose.

I thought those just additional fiction in the story. I knew and the fact that there was a Titanic but the plot of the movie wasn't true.
