Simple but tasty food

Today I would like to share  some of my favorite food items with you that are easy to cook but tasty!

Egg plant  fry: For this you have to wash then make slices of the eggplant(s) into medium (not thin not too thick) round shapes. Then take a  deep bowl, put  turmeric powder ( one/two tea spoon), salt, add sliced eggplant and mix them properly. Now put a pan on the gas/electric stove, oil it ( two/three medium table spoon of oil will be okay) heat it up then put the slices. After some time turn them over, I mean fry them on each sides. You can eat them with hot rice or bread!

Eggplant Vorta: You need to boil the Eggplants/ you can put the washed and dry Eggplants on your gas stove (not electric stove/oven)/if you cook outside and coal or dry tree branches is used as  fuel! And, if you put the Eggplant on your gas stove you have to change its sides now and then and have the fire low. Now pill the skin of the boiled or done Eggplant, placed the pill off Eggplant into a deep bowl, add thinly sliced green peeper, onion rings, coriander leaves, salt, a very little amount of actually just a tip of mustard oil add mix them properly. I think, now you can smell its fragrance! Have it with hot rice!

Dry fish: I know many people like dry fish and many do not! So, if you like here is a recipe! First take some dry fish, cut them into small pieces (if they are big) then put them into warm water, add some salt, warm water and salt make the skin soften so they are useful to clean the fish and make the dry fish less stinky...lol. Now put a deep pan on an oven, add oil, sliced onion rings, sliced garlic ( some more), red chilly powder, turmeric powder, add little water and cook them for a while. Now add the dry fish, you can add some sliced potatoes too,  now mix and cook, add more water and  let them cook properly. You can enjoy cooked dry fish with rice and bread.

Hilsha fry: Hilsha is a fish, very tasty but bony! A species of fish related to the herring, in the Clupeidae family. First you have to descale and slice it but it is not tough or you can buy descaled and sliced Hilsha from a store. Now for frying you just need to add little amount of turmeric powder and salt and mix them properly. Put a pan on the oven, oil it ( add some more oil) heat it medium hot and put the  sliced fish, turn them over, you can add some sliced onion rings and green peepers. So tasty with hot rice! Anyway, you can make a curry with Hilsha fish and Eggplant too.

Jack fruit seeds Vorta: Jack fruit seeds vorta?! Yes, and it is really so tasty. First pill the seeds and boil them properly.Then put the boiled ( be careful do not touch when they are too hot!) seeds into a bowl. Break and press them with your hand or a spoon, add some sliced onion rings, green peeper, salt, you can add a tip of mustard oil if you have, if not it is also okay. Now mix them all properly and enjoy the vorta with hot rice!

       For this very purpose I have a special wire basket where I insert the unpeeled eggplant [pierced at both ends, of course ;)] and put the wire basket over the gas fire of my cooking stove, simple..no?

  • @ Zivi, sir, Yes, Eggplant is really so tasty, you can use it as vegetable in a fish curry or try to make Vorta with it!

    @ Tatu, yes, jack fruit seeds are hard but if you boil it enough/properly with adequate water, it will be soften.

    @ Roma, I also know you eat some fish raw or salted! But, I can not so if you invite me please cook them properly.....lol

    @ Rys, really happy to get your comment! And, nice to know you like Eggplant but I prefer onion slices/rings ( a few) instead of garlic, you can try with onion too.

       My favourite way of preparing an eggplant is simply to roast/bake it over an open fire, eggplant, skin and all...if your forget to pierce it at both ends,....then you will have to repaint the kitchen to remove the remains of the exploded eggplant. Anyway, after the eggplant gets well roasted, I take it off the fire, put it on a plate and let it cool down. When it's cool enough to cut it in half, i do it taking care not to get too many burnt skin into the eggplant itself...then just add finely chopped garlic, some salt and pepper, sprinkle with olive oil and greedily pig it out with a spoon...yummiest thing in the whole universe.

    Here, in Ukraine we have some similar recipes of the eggplants and fish. But I have never tasted that Jack fruit, not to mention it's seeds. 

    And there are some kinds of fish, that usually we don't even fry, boil or bake it, sometimes it is enough just to pour some amount of salt over the fish or to cover the fish with salt and put it to the fridge. And after 2-3 days it is ready. I mean herring. Sometimes we add some slices of onion.

    Ah, and maybe 5-6 months ago I have watched a video about cooking one kind of fish for 4-5 minutes. In that video they just cover the fish with lots of the spices, put it inside box and wait for 4-5 minutes.

  • hey bet. Thanks for the recipes. Hope you can add some images. they make them recipes more imaginary. As about egg plants all I know that you have to cut it into halves and salt them in order to get the water absorbed. After that they will remain more solid and are a good substitide for meat or beef. somewhat similar to Tofu. Some herb with it makes them eggplants really tasty.
