This blog is dedicated to Luci because of her question about the McDoos. It's about a national Syrian food that I mentioned in my previous blog.
McDoos is some national stuff of food we do in Syria. We do it one time per year in the season of eggplant flourishing (almost in September), and then we store and pickle it as a provision for the whole year :D
I will give you the real ingredients which we usually do for a year provision of Mcdoos. And this will be sufficient for consuming of an average family of 4 persons for the whole year.
Please, don't consider the ingredients in the below photo, because I am going to make it BIGGER :D
- 20 Kgs eggplant (to be boiled till it will have a bit soft texture. The texture of your final product is controlled by the degree of boiling, and it differs from person to another. Some people like it hard, and some others like it a very little bit soft like in my case)
- 2 Kgs Walnut (to be crashed to a little bit coarse pieces)
- 5 Kgs red chilly pepper (you can mix it with cold red pepper if you don't like spicy so much, and you have to mince it, but please please please just be careful >_<)
- Smash a proper amount of garlic as well and mix it with minced red pepper and crushed walnut to be used as a base for stuffing the eggplants..
- Dry the water off the eggplants after boiling. use a heavy weight and a mesh underneath to pressure them off. Keep them under the pressure for a day or so.. It's very important to work on completely dried eggplants.
- Salt the dried eggplants and make a hole through their bodies to be filled later with the stuffing. use a raw salt (without iodine) and salt the eggplant from inside to outside..
- Stuff the eggplants with the admixture prepared from red peppers, walnuts, and garlic.
- Finally! with a proper container, arrange your ready Macdoos, and then fill the container with olives oil to smother the eggplants.
- Pay attention that your Mcdoos will not be ready before one week until it will be pickled.
And that's it everything about the McDoos.. Hope somebody will have the courage to try it at home and hope more it will be successful...
Important Note:
Before trying, please keep in mind that not all kinds of eggplants are good for the use of McDoos. It needs to be of a small size as you can see, but some kinds of small eggplants are very seedy which will turn after pickling into a slippery shell and a very seedy texture, and it will not be savory at all. In Saudi Arabia, I can not find adequate species in the market, So I need to bring special species available only by Syrian specialists' shops here.

in spite of what you may think, it's a breakfast meal.. I can see that some people here have imagined that it's a dinner or lunch meal that can be chicken or meat.. But it's not.. We eat it with red tea on the breakfast.. And sometimes, if you wanna a light dinner, you can eat it as well :)

believe it or not, to have a husband who can cook is never a nice thing. and you can ask my mother for the proof... I am really tough that I can't be satisfied easily, so to cook something bad or to mess with my dish, you will really really never like it :P
