Dear friends I want to share this time some tips about my new experience with coconut oil. I'm loving the taste and the magic power of this oil on my body. I live in a place where coconut is not grown and the price is a lil high but despite all i fall in love with the fruit and with oil.
Coconut oil is an edible oil that has been consumed in tropical places for thousands of years. Studies done on native diets high in coconut oil comsuption show that these populations are generally in good health, and don’t suffer as much from many of the modern diseases of western nations where coconut oil is seldom consumed anymore.
The health benefits of coconut oil include hair care, skin care, stress relief, maintaining cholesterol levels, weight loss, increased immunity, proper digestion and metabolism, relief from kidney problems, heart diseases, high blood pressure, diabetes, HIV, dental care, and bone strength. These benefits can be attributed to the presence of lauric acid, capric acid and caprylic acid, and its properties such as antimicrobial, antioxidant, antifungal, antibacterial, soothing, etc.
Coconut oil has many health benefits which are attributed to the presence of lauric acid. When it is present in the body, lauric acid is converted into monolaurin, a compound that is highly toxic to viruses, bacteria, funguses and other microorganisms because of its ability to disrupt their lipid membranes and virtually destroy them.
Others - aside from the health benefits mentioned earlier the following health benefits have been attributed to the beneficial use of coconut oil:
• Protects against cancer and HIV and other infectious diseases
• Kills bacteria and parasites like tape worm and liver flukes
• Eases acid reflux, aids in proper bowel function
• Lowers incidence of hemorrhoids
• Heals and relieves intestinal problems
• Soothes earaches
• Deals with symptoms connected with prostate enlargement
• Strengthens the liver and protects against degeneration
• Reduces incidence of epileptic seizures
• Reduces joint and muscle inflammation
• Eases neuropathies and itching from diabetes.
Coconut Recipes
Servings: 12
Preparation Time: 15 minutes
Donuts:
- 1/4 cup coconut flour
- 3 eggs
- 1/4 cup coconut oil, softened or melted
- 1/3 cup organic cane sugar
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- dash salt
Glaze:
Preheat oven to 400 degrees.
Prepare petite donut pan (12 donut size) by greasing lightly with coconut oil.
Beat all donut ingredients until well incorporated and fluffy. Divide into each donut well evenly - each well held approximately one tablespoon. Bake for 15 minutes or until very slightly golden brown. Cool slightly.
Meanwhile, make your glaze. In a small pan over very low heat add glaze ingredients and stir until melted.
Swirl the donuts one at a time into the chocolate glaze on the flatter side to get more coverage. Let set and cool for as long as you can wait.
Chocolate Variation: Add 1/4 cup cocoa to batter and bake exactly as above. I used only 1 1/2 teaspoons of powdered sugar to garnish and dusted the rounded side instead.
